PICNIC POTATO SALAD
Makes 6 – 8 servings
1 pound potatoes, cooked, chopped
1/2 cup onion, chopped fine
1/4 cup green pepper, chopped fine
1/2 cup celery, chopped fine
1/4 cup sweet relish
1/3 cup mayonnaise
2 tablespoons dijon mustard
1 teaspoon salt
1/4 teaspoon cayenne pepper
1/4 teaspoon paprika
- In a large bowl mix the potatoes, onions, peppers, celery, relish, mayonnaise, mustard, salt and cayenne pepper.
- Mix all ingredients together until well blended.
- Garnish with pickles and lettuce, sprinkle with paprika.
- Chill until ready to serve.
