DANDELION SALAD

DANDELION SALAD

A salad made out of Dandelion greens, straight from your garden.

Makes 4 servings

1/2 pound tender young dandelion greens

1/2 cup red onion, thinly sliced

2 tomatoes, cut into 1/8

1/4 cup Parmesan cheese, shredded

1/2 teaspoon salt

1/8 teaspoon cayenne pepper

Salad Dressing

  1. Wash dandelion greens, drain well and cut into 2 inch pieces.
  2. Place greens into a large bowl, add red onions, tomatoes, Parmesan cheese, salt and pepper toss together.
  3. Pour salad dressing over salad.
