PICNIC POTATO SALAD

Makes 6 – 8 servings

1 pound potatoes, cooked, chopped

1/2 cup onion, chopped fine

1/4 cup green pepper, chopped fine

1/2 cup celery, chopped fine

1/4 cup sweet relish

1/3 cup mayonnaise

2 tablespoons dijon mustard

1 teaspoon salt

1/4 teaspoon cayenne pepper

1/4 teaspoon paprika

  1. In a large bowl mix the potatoes, onions, peppers, celery, relish, mayonnaise, mustard, salt and cayenne pepper. 
  2. Mix all ingredients together until well blended. 
  3. Garnish with pickles and lettuce, sprinkle with paprika. 
  4. Chill until ready to serve.
