MANGO SALSA

MANGO SALSA

Makes 3 cups

1 pound mango, peeled, seeded and chopped

1/2 cup finely chopped onion

1/2 cup green pepper

2 or 3 jalapeno peppers, seeded, minced

1 tablespoon sugar

1/2 cup coriander or cilantro

1/2 teaspoon oregano leaves

1 tablespoon lime or lemon juice

1 tablespoon vinegar

1/2 cup pineapple juice

1/2 cup tomato juice

  1. In a large bowl, combine all ingredients. 
  2. Cover; refrigerate several hours.
