MARINATED TOMATILLO SALAD
Makes 4 – 6 servings
8 fresh green tomatillos, husk removed and sliced
2 medium tomatoes, sliced
1 cucumber, sliced
1 red onion, sliced thinly
2 tablespoons white wine vinegar
6 tablespoons olive oil
1 teaspoon sugar
1/2 teaspoon basil
1/4 teaspoon salt
1/8 teaspoon cayenne pepper
- Place the tomatillos, tomatoes, cucumbers and onions into a bowl.
- In a small bowl combine or food processor, vinegar, olive oil, sugar, basil, salt and cayenne pepper.
- Blend together and pour over the tomatillos mixture.
- Cover and chill at least 30 minutes or up to 2 hours.
