MARINATED TOMATILLO SALAD

Makes 4 – 6 servings

 

8 fresh green tomatillos, husk removed and sliced

2 medium tomatoes, sliced

1 cucumber, sliced

1 red onion, sliced thinly

2 tablespoons white wine vinegar

6 tablespoons olive oil

1 teaspoon sugar

1/2 teaspoon basil

1/4 teaspoon salt

1/8 teaspoon cayenne pepper

  1. Place the tomatillos, tomatoes, cucumbers and onions into a bowl. 
  2. In a small bowl combine or food processor, vinegar, olive oil, sugar, basil, salt and cayenne pepper. 
  3. Blend together and pour over the tomatillos mixture. 
  4. Cover and chill at least 30 minutes or up to 2 hours.
