SPICY SHRIMP RICE SALAD

Makes 4 – 6 servings

 

8 ounces bay shrimp, cooked and peeled

2 cups cooked rice, white or brown

1/2 cup onion, chopped

1/2 cup celery, chopped

1/4 cup sweet red pepper, chopped

2 tablespoon white wine vinegar

1 cup nonfat plain yogurt

2 tablespoon dijon mustard

1/4 teaspoon basil

1/4 teaspoon tarragon

1/4 teaspoon thyme

1/2 teaspoon salt

1/4 teaspoon pepper

1/2 teaspoon curry powder

  1. In a large bowl add shrimp, rice,  onions, celery and peppers, toss together. 
  2. In a small container add yogurt, vinegar, mustard, basil, tarragon, thyme, salt, curry powder and pepper. 
  3. Cover with a tightly fitting lid and shake vigorously. 
  4. Pour well shaken dressing over the shrimp and pasta mixture. 
  5. Chill for at least 30 minutes. 
  6. Serve as a main dish salad or a side dish.
