TABOULEH

Makes 6-8 servings

1 cup bulgur wheat

2 cups snipped parsley

1 large cucumber, finely chopped

1/2 cup finely chopped green onion

2 teaspoons olive oil

1/3 cup lemon juice

1 tablespoon snipped fresh mint

1/8 teaspoon salt

1/8 teaspoon pepper

1 clove garlic, minced

1 large tomato, chopped

Instructions:

  1. Place bulgur into a bowl and add the boiling water. 
  2. Stir, cover the bowl, and leave to stand for about 35 minutes. 
  3. Drain the bulgur, squeezing out any remaining water between the palms of your hands. 
  4. Combine bulgur, parsley, cucumber, and onion.
  5. For dressing, in a screw-top jar combine olive oil, lemon juice, mint, salt, pepper, and garlic; shake to mix. 
  6. Add to bulgur mixture. 
  7. Toss gently till well coated. 
  8. Cover and chill, before serving stir in tomato.
