TABOULEH
Makes 6-8 servings
1 cup bulgur wheat
2 cups snipped parsley
1 large cucumber, finely chopped
1/2 cup finely chopped green onion
2 teaspoons olive oil
1/3 cup lemon juice
1 tablespoon snipped fresh mint
1/8 teaspoon salt
1/8 teaspoon pepper
1 clove garlic, minced
1 large tomato, chopped
Instructions:
- Place bulgur into a bowl and add the boiling water.
- Stir, cover the bowl, and leave to stand for about 35 minutes.
- Drain the bulgur, squeezing out any remaining water between the palms of your hands.
- Combine bulgur, parsley, cucumber, and onion.
- For dressing, in a screw-top jar combine olive oil, lemon juice, mint, salt, pepper, and garlic; shake to mix.
- Add to bulgur mixture.
- Toss gently till well coated.
- Cover and chill, before serving stir in tomato.
