MARINATED VEGETABLE SALAD

Makes 6 servings

1/2 cup carrot, sliced

1/2 cup broccoli, cut

1/2 cup cauliflower, cut

1/2 cup mushroom, clean

1 small onion, chopped

1/2 cup celery, chopped

1/2 cup green pepper, cored and chopped

1/4 cup white wine vinegar

1 tablespoon cooking wine

1/4 cup lemon juice

1/2 teaspoon salt

1/4 teaspoon white pepper

1/2 teaspoon basil

1/2 teaspoon marjoram

1/2 teaspoon tarragon

  1. Place the vegetables, onions, celery and pepper in a large bowl and mix together. 
  2. In a small container mix vinegar, wine, lemon juice, salt, pepper, basil, marjoram and tarragon together. 
  3. Pour the marinate over the vegetable blend and mix together. 
  4. Refrigerate for at least 30 minutes prior to serving.
