MARINATED VEGETABLE SALAD
Makes 6 servings
1/2 cup carrot, sliced
1/2 cup broccoli, cut
1/2 cup cauliflower, cut
1/2 cup mushroom, clean
1 small onion, chopped
1/2 cup celery, chopped
1/2 cup green pepper, cored and chopped
1/4 cup white wine vinegar
1 tablespoon cooking wine
1/4 cup lemon juice
1/2 teaspoon salt
1/4 teaspoon white pepper
1/2 teaspoon basil
1/2 teaspoon marjoram
1/2 teaspoon tarragon
- Place the vegetables, onions, celery and pepper in a large bowl and mix together.
- In a small container mix vinegar, wine, lemon juice, salt, pepper, basil, marjoram and tarragon together.
- Pour the marinate over the vegetable blend and mix together.
- Refrigerate for at least 30 minutes prior to serving.
